CHICKEN BIRYANI

This aromatic, mouth watering and authentic Chicken Biryani with succulent chicken in layers of fluffy rice, fragrant spices and Kissan Fried Onions is a must try this fall season. 

Chicken Biryani Recipe

Cook Time: 1 hour and 30 mins Course: Main Cuisine: Indian Servings: 4

Ingredients:

For Marinade 

Whole Spices:

  • 3 medium dried bay leaves
  • 5-6 whole cloves
  • 4-5 whole black cardamoms
  • 6 star anise
  • 6 green cardamom pods
  • 2 3-inch cinnamon sticks
  • 3/4 tsp cumin seeds
  • 1/2 tsp whole black peppercorns

For Biryani:

Instructions:

  1. In a medium mixing bowl, combine the chicken and the marinade ingredients. Set aside for 30-45 minutes. 
  2. Over high heat, heat a large, heavy-bottomed pan. Add Kissan Olive Oil, Kissan Desi Ghee. Let it heat for a minute and then add the whole spices. You can also blend the whole spices and use the powder. If you are going to use the spice powder add after onions not on the heat oil since the powder gets burned.
  3. Now add onions and sauté until the onions are golden.
  4. Add garlic, and ginger and sauté for another 2 minutes and add the chopped tomatoes. 
  5. While the spices and tomatoes are cooking, in a blender blend green chilli, fresh coriander and mint.
  6. Add the green paste mixture to the pot and let it cook for a minute. 
  7. Now add the masalas - Kissan Madras Curry Powder, Kissan Garam Masala, Red Chilli Powder, Turmeric, Coriander Powder and Salt. Sauté for 1 to 2 minutes.
  8. Add the marinade chicken and mix well and let it cook.  
  9. Meanwhile, wash it thoroughly and soak 4 cups of rice in water for 10 minutes. 
  10. In a kettle or a pot boil 6 cups of water. Now add the hot water to the pan and mix well with the chicken. 
  11. Once you start seeing a few boil bubbles, add in the rice and Kissan Yellow Food Colouring mixed with water. Reduce the heat to a gentle simmer (this is low heat on my stovetop) and mix the rice well.  
  12. Cover the lid and let it cook for 7-8 minutes, then remove the lid and take the rice & curry from the bottom and put it on top. Let it cook for another 7-8 mins and then the biryani is ready.
  13. Now add one more layer of Kissan Fried Onions. Serve hot with yogurt or raita.
