Cook Time: 45 mins
Serves: 4 servings
Ingredients:
- 2 tbsp of Kissan Olive oil
- 2 tbsp of Kissan Tandoori Masala
- 2 cups of quinoa
- 1 carrot
- 1 orange bell pepper, chopped into bite-size pieces
- 1 can of chickpeas
- a handful of spinach
- Salt to taste
- Boiling water
Instructions:
1. In one big baking casserole add 2 tbsp of Kissan Olive oil, 2 tbsp of Kissan Tandoori Masala
2. Add the vegetables and the 2 cups of quinoa to the casserole and on top boiling water.
3. Bake it for 30 mins, until the Quinoa absorb all the water.
4. Add the bell peppers to the pan, and stir-fry for another 2-3 minutes.
5. Garnish with fresh coriander for a fresh, herby lift.
